Another raw cookies? Yes please!
You might be tired ‚cause I posted already a raw cookie recipe but seriously could you ever get bored of it?!
I would also call this superfood snack a lill green monster and you’ve probably notice my obsession of green food lately. Well, but to be honest I haven’t made a green smoothie bowl yet. So you know whats in the making in a few weeks…
But lets go back to these cookies. The main sweetener is of course my beloved dates and a few teaspoons homemade date syrup. Damn you can give me a 5 kilo pack of them and there’re half gone in less than a week. Please tell me I’m not the only one…
And the other ingredients (like chia seeds, oats, buckwheats, coconut flakes) create a healthy and nourishing treat. So you definitely needn’t feel guilty after making twice of the amount and eat them immediately. And to make everybody going-„nut“ I also added a (huge) teaspoon of cashew butter, but peanut or almond butter would match perfectly too.
And the filling? Well, its another „keep it simple“ recipe. Just pure and homemade coconut butter with a bit matcha powder. I have to admit, I’m not a huge fan of drinking the green superfood powder, like moringa or chlorella but with mixing in banana icecream or also in more sweet recipes you wouldn’t taste the uhm quite bitter and „stinky“ flavor.
Who wouldn’t want a bit?
What you need:
250 grams Coconut flakes
1 tsp matcha powder
1 tsp salt
- Place all ingredients in a food processor and pulse until the mixture comes together. Form little balls and press them down on a sheet. Keep the cookies in the refrigerator for 10-15 Minutes.
- Afterwards put the coconut flakes in the blender and mix on high speed, scraping down the sides often for 10 or 20 minutes, until a thick paste is formed.
- Place one teaspoon on the chilled raw cookies, press one on top of each other and put it again in the refrigerator until you want to eat it.
