Valentine’s Day Smoothie jar

Yep, its valentine’s day soon..

And therefor you need a huge jar for your loved, or just for yourself to start the day.
Ok, ok I have to admit I’ve never celebrate this day or went to a date…I know, I’m that sad girl. But when it comes to dates, well I would rather prefer the non living one.
Approximately thumb-sized. Really soft. And with a stone inside.

Yes, and there’re not only selling dates, which are the best quality I’ve ever caught, there’re also avocados, red/white grapefruits and oranges…

You can imagine how much I adore fresh and delicious fruits, as well as peanut butter, chocolate, shaped fruits, oatmeal….

But now go to this jar. Its a messy mixture of uhm well, all my favorite things.
Fresh strawberries, also mangoes, dates,…

melted cashew butter(hell yes, definitely a must)

and coconut creme made of coconut butter.

and some matcha date syrup sweetened granola. The recipe is pretty much the same as this one just with a big spoonful matcha powder.

And how cute are these strawberries! I came to the conclusion that it doesn’t need a valentines day to prepare something with love.

No definitely not!

 

What you need:

 

Smoothie:
half fresh or frozen mango
a small raw beet, cut into chunks (optimal)
30 grams fresh or frozen raspberries
30 grams fresh or frozen strawberries
1 ripe banana, frozen if possible
110 ml almond milk
3 Medjool Dates
1 tsp vanilla extract

 

Raspberry-jam:

20 grams fresh raspberries
3 tsp chia seeds

 

Coconut cream:

3 tsp coconut butter
5 1/2 tsp water

 

Direction:

  1. In a blender, combine the mango, banana, raspberries, strawberries, beets (if using) and vanilla. Add the almond milk and blend until smooth, adding more milk if needed.

  2.  Mash the raspberries with a fork, add chia seeds and cover and let sit in the fridge for 1-2 hours or overnight, stirring once or twice to prevent the chia seeds form forming lumps.

  3. Stir in a bowl the coconut butter and water until the desired consistency is reached
